Charakterystyka przemysłu zbożowo-młynarskiego w Polsce

Abstract

W opracowaniu dokonano charakterystyki przetwórstwa zbożowego w Polsce w latach 2001-2008. Zawarto w niej dane dotyczące rynku zbóż, liczby młynów i ich struktury oraz wielkości dokonywanych przemiałów zarówno w skali pojedynczego młyna, jak i w skali kraju. Przedstawiono obowiązujący podział na przetwórstwo przemysłowe i spożywcze. Szczególną uwagę zwrócono na przemysł zbożowo-młynarski z uwzględnieniem przetwórstwa pierwotnego i wtórnego. W formie tabelarycznej i rysunkowej ukazano tendencje zmian w przetwórstwie zbóż w badanym okresie oraz spożyciu zbóż i przetworów zbożowych w latach 2001-2008.

The study provides a characteristic of cereal processing in Poland between 2001 and 2008. Commencing from the presentation of patterns of the formation of ratio values within the industry, the project then goes on to determining the number of mills, in an attempt to investigate their structure and organization, arriving eventually at an exploration into the sizes of the grinds conducted, both in the context of a single mill, as well as on a national scale. The proposed project also stresses the acknowledged division into, on the one hand, food industry processing, and on the other - industrial goods processing. Special emphasis has been placed on the cereal and milling industry, taking account of both initial and secondary processing. The directions of change in cereal processing and in cereal and cereal products consumption in the investigated years have been presented in a tabular and diagram form.
